Ingredients:

2 tbsp Olive Oil
1 cup Chopped Onion
3 cloves minced Garlic
3 cups Chicken Broth
2 cups Pureed Tomatoes
2 cups Romano Beans (dried or canned)
1 Bay Leaf
300 grams pasta (cut ziti)
Salt & Pepper to taste

Preparation:

  • Add olive oil to a stockpot over med to high heat
  • Once oil is heated, add onions and garlic and saute until translucent (about 5 min)
  • Add chicken broth, tomatoes, beans and bay leaf.  Bring to a boil stirring occasionaly.
  • Once the liquid has come to a boil, reduce the heat to medium and allow to simmer for 10 min.
  • Turn up the heat to medium-high and add the pasta. Add salt and pepper to taste. Allow to cook as  per package (roughly 8 min for al dente).
  • Remove from heat and serve as quick as possible
